Easy Baked Salmon and Asparagus Meal
Ingredients
- 2/4 cup lemon juice
- 3 or 4 tbsp. butter
- 2 tbsp. freshly diced parsley or cilantro
- 4 fresh minced garlic
- 1 tbsp of Old Bay Seasoning
- 1 tbsp of your fav. hotsauce
- salt and pepper to your liking
- 2 tbsps of vegt broth
- 1 lb of medium thick asparagus
- 3 salmon filets; skin on or off (about 6 oz. each)
Instructions
- Preheat the oven to 425 degrees. Prep your foils by gathering two heauty duty auluminum sheets that are sized 14 x 12 inches. Place them both on a oven-safe pan sheet and fold each sheet. You should only have two now. There is not a correct way to do this. Just make sure it’s not wrong. Make a large gap in the center to hold you food. And leave the sides out so they can close over top of it during baking.
- In a small bowl combine lemon juice,broth and hot sauce.
- Season both sides of the salmon with salt, pepper, and a sprinkle of the old bay for a kick. Than place the filets in the center of the aluminum foils.
- Lightly season the asparagus with salt and pepper. Than place the asparaguus on either side of the salmon.
- Sprinkle garlic, parsley/cilantro over both the salmon filet and the aspargus for garnish Add a lemon slice for zest and variety.
- Lastlly, crimp the ends of the foil together but not too tight. Let it have room to vent. And cook for 10 mins.
- Turn the stove off. Use caution and pull out the pan sheet from the oven. Slightly open the foils, to let some steam out. Serve in the foils, or over rice. You can also add a side of potatoes. Enjoy.
