French Onion Soup

Tip: Roast the onions before blending them with the broth. It gives the French onion a caramelized flavor you can prepare the soup, bread, and cheese up to one day in advance.

Ingredients

  • 5 thinly sliced large yellow onions
  • 2 tablespoons olive oil
  • 1 tablespoon Balsamic vinegar
  • 1 tbsp reduced-sodium beef broth salt and freshly ground pepper style bread 6 slices each 1/2 in thick toasted parmesan cheese 1/2 cup freshly grated cheese 1/2 cup finely shredded

Directions

The Onions

Preheat the oven to 375 degrees Fahrenheit.Next line two baking sheets with parchment paper.

In a large bowl toss the onions with oil and vinegar. Then scattered the onions on the prepared parchment paper.

Now roast the onions, turning several times until golden brown on the edges. This process will take 30 to 35 minutes. Once the onions look caramelized, remove them carefully, from the oven.

Broiler

Preheat the broiler.

In a large pot over medium-high heat, bring the broth to a rapid simmer. Add the onions then reduce the heat. Let the flavors marinate for 15 minutes. Add salt and pepper to taste.

Now arrange six 8 Oz flameproof soup bowls on a rimmed baking sheet. Spoon the soup into the bowls and evenly float a bread slice on the side of the bowl.

Mix together the cheeses and sprinkle on bread slices


Place the baking sheet under the broiler and boil them until the cheese melts and becomes golden brown. This will take about 2 minutes. Serve right away.
