Homemade Breakfast Pizza

Enjoy a yummy laid back breakfast meal. Yet it is full of nutrients to boost energy and keep tummies full longer. This is a plus during school closings when kids usually snack more.

Ingredients

  • 1 1/2 tablespoons of olive oil
  • 6 slices of bacon
  • 5 large eggs
  • 1 cup of mozzarella cheese (shredded or cubed)
  • 1/2 cup of Fiesta cheese (optional) 1/2 cup of Cheddar cheese (optional)
  • 1 tablespoon of Parsley
  • 1 Pizza Dough Crust (Pillsbury)

Instructions

  • If you want to make homemade dough find the steps here. Do this now. If not set the pizza pie crust to the side until it is ready to use.
  • Cook your bacon until it is crispy.Avoid uncooked bacon. It will be rubbery on the pizza. Drain the oil.Crumble the bacon into bits. Set it aside.
  • Pull out pizza crust and brush the whole dough crust with olive oil. Then cover the whole pizza tray with mozzarella.
  • Now, scramble your eggs in the skillet. Do not fully cook eggs. Let them stay a bit wet, but cooked. Remember it will cook more in the oven.
  • Crumble the eggs up and spread it across the pizza evenly.
  • Scatter the bacon bits over the pizza evenly as well.
  • This is where you get creative. Sprinkle any additional toppings you may like. I like to top it with a sprinkle of Fiesta Cheese (mozzarella and cheddar cheese). Sprinkle with parsley evenly.
  • Bake the pizza in the oven on 475 degrees until the crust is golden, and the cheese is bubbly. This will happen around 12 to 15 minutes.
  • Be careful, cut evenly and serve hot. Enjoy.

Notes

  • This breakfast can be completed with a cup of fruit and a glass of orange juice.
