Ingredients

  • 3 cups of uncooked ziti or penne pasta noodles
  • 2 cups of diced/shredded cooked chicken breast
  • 1 can of alfredo sauce
  • 1 1/2 cup of fresh shredded mozzarella cheese
  • Italian Seasoning
  • Salt and Pepper
  • Fresh minced parsley for garnish
  • 1/2 cup of cooked spinach (optional)

Instructions

  • Preheat oven to 350 degrees F. Spray a medium-sized nonstick baking dish with cooking spray and set to the side.
  • In a medium-sized microwave-safe bowl cook pasta noodles for 10 mins or as directed on the box. The noodles can also be cooked on the stovetop. But for convenience, the microwave does the same and you can avoid overcooking it in the microwave.
  • If you want to make homemade alfredo sauce do this now. Check for the recipe here.
  • Once the noodles are done. Drain the noodles.
  • Season the diced and shredded chicken with salt and pepper. Lightly season it with Italian seasoning.
  • In the medium-sized baking dish add the drained noodles, diced/shredded chicken, alfredo sauce, 1 cup of mozzarella cheese, and cooked spinach (optional).
  • Stir all the ingredients until all noodles and chicken is evenly coated with the sauce and cheese.
  • Once everything is stirred. Add the remaining mozzarella cheese to the top layer over all of the pasta dish evenly.
  • Sprinkle the minced parsley over the top of the dish for garnish.
  • Place the completed pasta dish in the 350 degree oven for 35 mins.
  • Turn the oven off and let the dish cool.
  • Serve warm and with veggies and Garlic Bread for a complete meal. Enjoy!
