Ingredients

  • 2 tablespoons olive oil
  • 2 chicken breasts (approx. 1 pound)
  • 1 egg
  • 1 cup panko bread crumbs
  • 1/2 cup parmesan cheese fresh grated
  • 1 teaspoon dried oregano
  • 1/2 garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 cup marinara sauce
  • 1 1/2 cups shreddedd mozzarella
  • 2 tablespoon minced parsley optional for garnish

Instructions

  • Preheat the oven to 400 degrees F. Line a baking sheet with foil and brush the foil with olive oil. *Tip: Best if oven rack is on the second from the top space.
  • Cut the chicken breast in half and pound the chicken on the desired thickness. Once the chicken is cut in half place the halves in a gallon sized zip locked bag and continue to pound the chicken with a meat pounder or a rolling pin. *This is for the thickness and how tender the meat will be.
  • Pat the chicken dry with paper towels, then season with salt and pepper.
  • In one deep dish, combine the following: panko bread crumbs, grated parmesan cheese, salt, pepper, garlic powder, oregano, and black pepper.
  • In a separate dish whisk up one egg.
  • Dip one chicken breast into the egg mix than the bread crumb mix than repeat for all chicken portions. Place the finished pieces on the oiled and lined baking sheet. *Tip: Make sure that the chicken portion is fully coated with the chicken bread crumb mixture and put pressure on it so it can stick to the chicken.
  • Place baking rack in the oven (second from the top rack if possible) for 15 minutes, or until cooked through.
  • Last Step! Flip Chicken over after the 15 mins of cooking. Pour 1/4 cup of marinara sauce over each piece of chicken, then top it off with cheese. Place it back in the oven for only 2 to 4 mins on broiler. Just until the cheese is melted and bubbly and the edges have browned.
