Ingredients

1 lb ground beef (or turkey)

1 can (15 oz) corn, drained

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chiles (like Rotel)

1 can (15 oz) tomato sauce

1 packet taco seasoning

1 packet ranch dressing mix

2 cups beef broth

Salt and pepper, to taste

Optional toppings: shredded cheese, sour cream, diced avocado, jalapeños, green onions, crushed tortilla chips, lime wedges
Instructions

Brown the ground beef in a skillet over medium heat, then drain the grease.

Transfer the cooked beef to the crockpot.

Add all canned ingredients, seasonings, and broth. Stir to combine.

Cover and cook on Low for 6–8 hours or High for 3–4 hours.

Serve hot with your favorite toppings.
Notes
For a creamy version, add 4 oz cream cheese in the last 30 minutes of cooking.
For a vegetarian option, skip the meat and add extra beans.
Freeze leftovers up to 3 months and reheat with a splash of broth.
