This easy taco soup recipe for the crockpot is a dump-and-go meal packed with bold flavor, protein, and comfort. Perfect for busy weeknights, meal prep, or cozy family dinners.

Ingredients

  • 1 lb ground beef (or turkey)

  • 1 can (15 oz) corn, drained

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) kidney beans, drained and rinsed

  • 1 can (10 oz) diced tomatoes with green chiles (like Rotel)

  • 1 can (15 oz) tomato sauce

  • 1 packet taco seasoning

  • 1 packet ranch dressing mix

  • 2 cups beef broth

  • Salt and pepper, to taste

 

  • Optional toppings: shredded cheese, sour cream, diced avocado, jalapeños, green onions, crushed tortilla chips, lime wedges

Instructions

  • Brown the ground beef in a skillet over medium heat, then drain the grease.

  • Transfer the cooked beef to the crockpot.

  • Add all canned ingredients, seasonings, and broth. Stir to combine.

  • Cover and cook on Low for 6–8 hours or High for 3–4 hours.

 

  • Serve hot with your favorite toppings.

Notes


For a creamy version, add 4 oz cream cheese in the last 30 minutes of cooking.
For a vegetarian option, skip the meat and add extra beans.
Freeze leftovers up to 3 months and reheat with a splash of broth.
