1 (3–4 lb) corned beef brisket (with spice packet)

4 cups beef broth (or water + 1 tablespoon beef bouillon)

1 large onion, cut into wedges

4–5 medium red potatoes, halved

4 carrots, peeled and cut into thick slices

½ head green cabbage, cut into thick wedges

2 tablespoons Dijon mustard

1 tablespoon brown sugar

1 teaspoon smoked paprika

2 bay leaves

1 tablespoon apple cider vinegar or Guinness beer (optional)

2 tablespoons butter
Instructions

Prep the ingredients: Rinse corned beef under cold water to remove excess brine. Cut all vegetables into large chunks so they don’t fall apart during cooking.

Layer the base: Place onions, potatoes, carrots, and garlic into the bottom of the slow cooker.

Add the beef: Lay corned beef on top, fat side up. Sprinkle seasoning packet, smoked paprika, brown sugar, pepper, and bay leaves. Spread Dijon mustard on top.

Add liquid: Pour beef broth and apple cider vinegar (or beer) around the meat.

Slow cook: Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until meat is fork-tender.

Add cabbage: Place cabbage wedges on top during the last 30 minutes of cooking.

Serve: Remove beef and let rest for 10 minutes before slicing against the grain. Stir butter into the vegetables and broth for extra flavor, then serve warm.
